Additional Info: A unique kitchen knife with a Japanese influence. One side is forged finidhed, showing every blow of my hammer; while the other side is ground flat. To sharpen this knife it is treated like a chisel, with the ground side laid flat to the stone. This produces a very fine and therefore very sharp edge. I demonstrated this recently by feathering a rizla paper using the knife's own weight!
